ZeroCarb Mug Bread Recipe

If you’re following a zero-carb, keto, or carnivore lifestyle, finding a bread substitute can be one of the biggest challenges. Traditional bread is made with wheat flour, which is high in carbohydrates and not suitable for people trying to keep their carb intake at zero. This Zero-Carb Mug Bread is a quick, delicious alternative that is soft, fluffy, and satisfying. It takes only a few minutes to prepare, uses simple ingredients, and is perfect for breakfast, lunch, snacks, or even dinner. You can enjoy it with butter, eggs, cheese, or your favorite zero-carb fillings. Since it is cooked in the microwave, there is no need to preheat an oven, making it ideal for busy mornings or whenever you want fresh bread in minutes.

Preparation Time

  • Prep Time: 3 minutes
  • Cook Time: 90 seconds to 2 minutes
  • Cooling Time: 2 minutes
  • Total Time: About 7 minutes
  • Servings: 1 mug bread

Ingredients

To make one serving of zero-carb mug bread, you will need:

  • 1 large egg
  • 1 tablespoon melted butter (or beef tallow)
  • 2 tablespoons egg white powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder (optional)
  • ¼ teaspoon dried Italian herbs (optional)
  • Butter or oil for greasing the mug

Equipment Needed

  • Microwave-safe mug or ramekin
  • Small whisk or fork
  • Measuring spoons
  • Microwave
  • Butter knife for slicing

Step-by-Step Instructions

Step 1: Prepare the Mug

Choose a microwave-safe mug that holds at least 10 ounces. Grease the inside lightly with butter or a little oil. This helps prevent the bread from sticking and makes it easier to remove after cooking. Even if your mug has a non-stick surface, greasing it lightly gives the bread a smoother finish.

Step 2: Crack and Beat the Egg

Crack one large egg directly into the mug. Using a fork or small whisk, beat the egg thoroughly for about one minute. Continue mixing until the yolk and egg white are completely blended together. A well-mixed egg creates a lighter and fluffier bread texture.

Step 3: Add the Butter

Pour the melted butter into the beaten egg. Stir continuously until the butter is fully mixed. Butter adds richness, moisture, and flavor while helping create a soft bread instead of a dry one. If you prefer a carnivore version, beef tallow works equally well.

Step 4: Add the Dry Ingredients

Add the egg white powder, baking powder, salt, garlic powder, and dried herbs to the mug. Stir slowly at first to prevent the powder from spilling. Once combined, mix vigorously until the batter becomes smooth. Make sure there are no dry lumps left. The finished batter should be thick but spreadable.

Step 5: Rest the Batter

Allow the batter to sit for one minute before cooking. This gives the baking powder time to activate slightly, resulting in a lighter texture once microwaved. Although optional, this small step makes a noticeable difference.

Step 6: Microwave the Bread

Place the mug in the center of the microwave. Cook on high power for 90 seconds. If the top still looks wet, continue cooking in 10-second intervals until fully set. Avoid overcooking because it can make the bread rubbery.

The bread should rise during cooking and become firm on top while remaining soft inside.

Step 7: Cool Before Removing

Remove the mug carefully because it will be hot. Let the bread cool for two minutes. Run a butter knife around the edges if needed and gently turn the mug upside down onto a plate. The bread should slide out easily.

Step 8: Slice the Bread

Use a sharp knife to cut the bread horizontally into two slices. If you prefer thinner slices for sandwiches, cut it into three pieces.

Step 9: Toast for Better Texture

Although the bread is ready to eat immediately, lightly toasting it improves both texture and flavor. Heat a skillet over medium heat with a little butter. Toast each side for one to two minutes until lightly golden.

Step 10: Serve and Enjoy

Serve warm with butter, fried eggs, cheese, grilled meat, bacon, or smoked salmon. You can also use it as sandwich bread or enjoy it alongside soups and salads.
