- Caster sugar: 80 grams
- Fresh mint leaves: 15–20 pieces (plus extra for garnish)
- Fresh or frozen raspberries: 150 grams (plus extra to serve)
- Fresh lime juice: 60 grams
- White rum: 150 grams (omit for a virgin mocktail)
- Soda water or club soda: 500 grams
- Ice cubes: 300 grams
Instructions
- Grind flavor base: Place caster sugar and fresh mint leaves into the mixing bowl. Grind for 10 sec/speed 10. Scrape down the sides of the bowl with your spatula.
- Blend fruit: Add the raspberries, fresh lime juice, and white rum (if using) to the bowl. Mix for 10 sec/speed 6.
- Assemble: Divide the ice cubes and a few extra fresh raspberries among 4 tall glasses
Top and serve: Pour the blended raspberry mixture evenly over the ice. Top each glass up with cold soda water, stir gently, garnish with extra mint, and serve immediately

- Seedless version: If you prefer a completely smooth drink without raspberry seeds, pour the mixture through the Thermomix simmering basket into a pitcher before adding the soda water.
- Sweeter swap Replace the soda water and sugar with lemon-lime soda if you prefer a sweeter, punchier drink
