Krispy Fried Chicken In Thermomix

Making KFC-style Krispy Fried Chicken in your Thermomix is a two-step process: milling a secret 11-spice blend into flour and double-coating the chicken before shallow-frying. This process takes about 20 minutes of prep and 10 minutes of cooking

Ingredients
Spice & Coating Mix:
  • 2 tbsp salt
  • 1 ½ tbsp black peppercorns
  • 1 ½ tbsp dried onion flakes
  • 1 tbsp dried granulated garlic
  • 1 tbsp dried rosemary
  • 1 tbsp dried basil
  • ½ tbsp paprika
  • ½ tbsp dried oregano
  • ½ tbsp yellow mustard seeds
  • 1 tsp dried thyme
  • 1 tsp dried tarragon
  • 350 g plain flour 
Chicken & Frying:
  • 350 g to 500 g chicken breasts (cut into strips)
  • 2 eggs (lightly beaten)
  • Vegetable or canola oil (for shallow frying) 
Instructions
  1. Mill the Seasoning: Place all the herbs and spices into the Thermomix mixing bowl. Mill for 30 sec / Speed 10.
  2. Scrape and Refine: Use a spatula to scrape down the sides of the bowl. Repeat the milling process at 30 sec / Speed 10 until you achieve a fine, powdery consistency.
  3. Make the Coating: Add the flour to the bowl and mix for 20 sec / Speed 10.
  4. Prep the Stations: Transfer \(\frac{1}{3}\) of this seasoned flour mixture into a large shallow bowl. Pour your beaten eggs into a separate shallow bowl.
  5. Double Coat: Dip the chicken pieces into the egg, dredge in the flour mixture, dip back into the egg, and dredge in the flour one more time to create that extra crispy crust.
  6. Fry: Heat 5 cm of oil in a deep saucepan over high heat to about 170°C. Working in batches, fry the chicken pieces for 7-10 minutes until golden brown and cooked through. Drain on paper towels. 
Tip: Store the remaining \(\frac{2}{3}\) of your dry seasoning mix in an airtight container for future use
