Step-by-Step Instructions
- Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan or line it with parchment paper.
- Peel and grate the carrots using the fine side of a grater.
- Mash the bananas until smooth.
- Blend the dates with a few tablespoons of warm water until they form a smooth paste.
- In a large bowl, whisk together the eggs, mashed bananas, date paste, oil, and vanilla.
- Stir in the grated carrots until evenly mixed.
