Gluten-Free Angel Food Cake
A light, fluffy, and airy gluten-free angel food cake is a delicious dessert that is naturally low in fat. Made with whipped egg whites instead of butter or oil, this cake has a soft, cloud-like texture and a delicate vanilla flavor. It is perfect for birthdays, afternoon tea, or served with fresh berries and whipped cream. With the right gluten-free flour blend and careful mixing, you can create a beautiful cake that tastes just as light as the traditional version.
Preparation Time
- Prep Time: 25 minutes
- Bake Time: 35–40 minutes
- Cooling Time: 2 hours
- Total Time: About 3 hours
Ingredients
- 1 cup gluten-free cake flour blend
- 1¼ cups powdered sugar
- 12 large egg whites (room temperature)
- 1½ cups granulated sugar
- 1½ teaspoons cream of tartar
- ¼ teaspoon salt
- 2 teaspoons vanilla extract
- ½ teaspoon almond extract (optional)
Instructions
Step 1: Prepare the Oven
Preheat your oven to 325°F (163°C). Do not grease a 10-inch angel food cake pan. The batter needs to cling to the sides of the pan to rise properly.
Step 2: Mix the Dry Ingredients
In a medium bowl, whisk together the gluten-free cake flour and powdered sugar. Sift the mixture two or three times to remove lumps and make it extra light. Set aside.
Step 3: Whip the Egg Whites
Place the egg whites, cream of tartar, and salt into a large mixing bowl. Beat with an electric mixer on medium speed until foamy. Gradually increase to high speed and slowly add the granulated sugar, one tablespoon at a time. Continue beating until stiff, glossy peaks form. The egg whites should be firm but not dry.
Step 4: Add the Flavoring
Gently beat in the vanilla extract and almond extract, if using. Mix only until combined.
Step 5: Fold in the Flour
Using a spatula, carefully fold the flour mixture into the whipped egg whites in four additions. Fold gently with slow strokes to avoid deflating the batter. Continue until no dry flour remains.
Step 6: Fill the Pan
Pour the batter into the ungreased angel food cake pan. Smooth the top gently with a spatula. Tap the pan lightly once on the counter to remove any large air bubbles.
Step 7: Bake
Bake for 35–40 minutes, or until the top is golden and springs back when lightly touched. A skewer inserted near the center should come out clean.
Step 8: Cool Upside Down
Immediately invert the cake pan onto its built-in feet or over the neck of a sturdy bottle. Let the cake cool completely upside down for about 2 hours. This prevents the cake from collapsing.
Step 9: Remove the Cake
Once completely cool, run a thin knife around the edges and center tube to loosen the cake. Carefully remove it from the pan and transfer it to a serving plate.
Step 10: Serve
Dust with powdered sugar or top with fresh strawberries, blueberries, raspberries, whipped cream, or a light fruit sauce. Slice with a serrated knife using a gentle sawing motion.
Tips for Success
- Use room-temperature egg whites for maximum volume.
- Make sure the mixing bowl and beaters are completely clean and free of grease.
- Sift the gluten-free flour several times for the lightest texture.
- Fold gently to keep as much air in the batter as possible.
- Never grease the angel food cake pan.
