Preparation Time

  • Prep Time: 15 minutes
  • Cook Time: 20 minutes
  • Total Time: 35 minutes
  • Servings: 4–6

Ingredients

For the Filling

  • 1½ pounds (700 g) lean ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, finely diced
  • 1 green bell pepper, finely diced
  • 8 ounces (225 g) mushrooms, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon ketchup
  • 1 teaspoon Dijon mustard
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 8 slices provolone cheese
  • 4–6 hamburger buns, toasted

Optional Toppings

  • Sliced pickles
  • Crispy fried onions
  • Extra provolone cheese
  • Chopped parsley

Instructions

Step 1: Toast the Buns

Slice the hamburger buns in half and lightly butter the cut sides if desired. Toast them in a skillet or oven until lightly golden. Set aside.

Step 2: Cook the Vegetables

Heat the olive oil in a large skillet over medium heat. Add the diced onion, bell pepper, and mushrooms. Cook for 6–8 minutes, stirring occasionally, until the vegetables are softened and the mushrooms have released and evaporated their moisture. Add the garlic and cook for another minute.

Step 3: Brown the Beef

Add the ground beef to the skillet with the vegetables. Break it apart with a wooden spoon and cook for 6–7 minutes, or until browned and fully cooked. Drain any excess fat if necessary.

Step 4: Make the Sauce

Push the beef mixture to one side of the skillet. Melt the butter in the empty space, then stir in the flour. Cook for 1 minute, stirring constantly, to remove the raw flour taste. Slowly pour in the beef broth while whisking until smooth.

Step 5: Season the Filling

Add the Worcestershire sauce, ketchup, Dijon mustard, onion powder, garlic powder, smoked paprika, salt, and black pepper. Stir everything together until the sauce coats the meat evenly. Simmer for 3–5 minutes until thick and rich.

Step 6: Melt the Cheese

Reduce the heat to low. Lay the provolone cheese slices over the meat mixture. Cover the skillet with a lid for 2–3 minutes, allowing the cheese to melt completely. Stir gently so the melted cheese is mixed throughout the filling.

Step 7: Assemble the Sandwiches

Spoon a generous amount of the cheesy beef mixture onto the bottom half of each toasted bun. Add extra provolone, crispy fried onions, or pickles if desired, then place the top bun over the filling.

Step 8: Serve

Serve the Philly Cheesesteak Sloppy Joes immediately while hot and gooey. Pair them with French fries, potato wedges, coleslaw, potato salad, or a crisp green salad for a complete meal.

Tips for Success

  • Use lean ground beef to reduce excess grease.
  • Chop the mushrooms finely so they blend smoothly into the filling.
  • Toasting the buns helps prevent them from becoming soggy.
  • Provolone is traditional, but mozzarella, white cheddar, or Monterey Jack also work well.
  • For a spicy version, add diced jalapeños or a pinch of red pepper flakes.
  • Leftover filling can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently before serving.
