Preparation Time

  • Prep Time: 30 minutes
  • Bake Time: 30–35 minutes
  • Cooling & Frosting: 1 hour
  • Total Time: About 2 hours
  • Servings: 10–12

Ingredients

For the Cake

  • 2½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk

For the Caramel Sauce

  • 1 cup granulated sugar
  • ¼ cup water
  • ½ cup heavy cream, warmed
  • 4 tablespoons unsalted butter
  • ½ teaspoon sea salt (optional)

For the Caramel Cream Frosting

  • 1 cup unsalted butter, softened
  • 8 oz (225 g) cream cheese, softened
  • 1½ cups powdered sugar
  • ½ cup cooled caramel sauce
  • 1 teaspoon vanilla extract

Instructions

Step 1: Prepare the Oven

Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.

Step 2: Mix the Dry Ingredients

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

Step 3: Cream the Butter and Sugars

In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3–4 minutes.

Step 4: Add the Eggs

Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Step 5: Combine the Batter

Add the dry ingredients in three additions, alternating with the buttermilk. Begin and end with the flour mixture. Mix just until combined.

Step 6: Bake the Cake

Divide the batter evenly between the prepared pans. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Step 7: Make the Caramel Sauce

In a saucepan, combine the sugar and water over medium heat. Cook without stirring until the mixture turns a deep amber color. Carefully whisk in the warm heavy cream—it will bubble vigorously. Stir in the butter and optional sea salt until smooth. Let the caramel cool completely.

Step 8: Prepare the Frosting

Beat the butter and cream cheese until smooth and fluffy. Add the powdered sugar gradually, then mix in the cooled caramel sauce and vanilla until creamy.

Step 9: Assemble the Cake

Place one cake layer on a serving plate. Spread a generous layer of caramel cream frosting over the top. Add the second cake layer and frost the top and sides evenly.

Step 10: Decorate

Drizzle the remaining caramel sauce over the top, allowing it to drip down the sides. You can also garnish with caramel candies, chopped toasted pecans, or a sprinkle of flaky sea salt.

Step 11: Chill and Serve

Refrigerate the cake for 20–30 minutes to help the frosting set. Slice and serve at room temperature for the best flavor and texture.

Tips

  • Use room-temperature ingredients for a smoother batter.
  • Don’t overmix the batter to keep the cake soft and tender.
  • Let the caramel cool before adding it to the frosting.
  • Toasted pecans or walnuts make a delicious crunchy topping.

Storage

  • Store covered in the refrigerator for up to 5 days.
  • Bring to room temperature for 20–30 minutes before serving.
  • Freeze unfrosted cake layers for up to 2 months.
