Healthy Carrot Cake (No Refined Sugar)

This healthy carrot cake is naturally sweetened with ripe bananas and dates instead of refined sugar. It is moist, flavorful, and perfect for breakfast, a snack, or a healthy dessert.

Ingredients

  • 2 cups grated carrots
  • 2 ripe bananas, mashed
  • 8 soft dates, pitted and blended into a paste
  • 2 eggs
  • ¼ cup olive oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1½ cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ½ cup chopped walnuts or pecans (optional)
  • ¼ cup raisins (optional)

Healthy Yogurt Frosting (Optional)

  • 1 cup thick Greek yogurt
  • 2 tablespoons date paste or mashed banana
  • ½ teaspoon vanilla extract

Step-by-Step Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan or line it with parchment paper.
  2. Peel and grate the carrots using the fine side of a grater.
  3. Mash the bananas until smooth.
  4. Blend the dates with a few tablespoons of warm water until they form a smooth paste.
  5. In a large bowl, whisk together the eggs, mashed bananas, date paste, oil, and vanilla.
  6. Stir in the grated carrots until evenly mixed.
  7. In another bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  8. Gradually fold the dry ingredients into the wet ingredients. Mix gently until no dry flour remains.
  9. Fold in the walnuts and raisins, if using.
  10. Pour the batter into the prepared pan and smooth the top.
  11. Bake for 35–45 minutes, or until a toothpick inserted into the center comes out clean.
  12. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
