Ingredients

  • 1 cup almond flour
  • 2 large eggs
  • 2 tablespoons cream cheese (softened)

  • 1 tablespoon low-carb sweetener (optional)
  • 1 pinch of salt
  • 1 tablespoon butter or coconut oil (for cooking)

Step 1: Prepare Your Workspace
Wash your hands thoroughly and clean the kitchen counter. Gather all the ingredients, measuring cups, mixing bowls, whisk, spatula, frying pan, and serving plate. Having everything ready makes cooking easier.

Step 2: Measure the Ingredients
Carefully measure each ingredient according to the recipe. Accurate measurements help the pancakes turn out soft, fluffy, and well-balanced in flavor.

Step 3: Crack the Eggs
Crack the two eggs into a large mixing bowl. Check that no eggshell pieces fall into the bowl. Fresh eggs give the pancakes a better texture.

Step 4: Beat the Eggs
Use a whisk or fork to beat the eggs for about one minute until they become smooth, light, and slightly frothy.

Step 5: Add the Cream Cheese
Add the softened cream cheese to the beaten eggs. Mix until the cream cheese blends completely and there are no large lumps.

Step 6: Add Vanilla Extract
Pour one teaspoon of vanilla extract into the bowl. Vanilla gives the pancakes a pleasant aroma and improves the flavor.

Step 7: Add Sweetener

Step 8: Add Salt

Step 10: Add Almond Flour

Step 11: Mix the Batter
Stir all the ingredients together until a smooth and thick batter forms. Scrape the sides of the bowl so everything is mixed evenly.

Step 12: Let the Batter Rest
Leave the batter to rest for about 2–3 minutes. During this time, the almond flour absorbs moisture, making the batter thicker and easier to cook.

Step 13: Heat the Pan
Place a non-stick frying pan on the stove over medium-low heat. Avoid using high heat because almond flour can brown quickly.

Step 14: Grease the Pan
Add a small amount of butter or coconut oil to the pan. Spread it evenly across the surface using a brush or spatula.

Step 15: Pour the Batter
Use a spoon or small ladle to pour about 2–3 tablespoons of batter into the pan. Leave enough space if cooking more than one pancake.

Step 16: Shape the Pancake
If necessary, gently spread the batter into a round shape using the back of a spoon. Do not make the pancakes too thin.

Step 17: Cook the First Side
Cook the pancake for about 2–3 minutes without moving it. Small bubbles will appear on the surface, and the edges will begin to set.

Step 18: Flip Carefully
Slide a spatula under the pancake and carefully flip it over in one smooth motion to avoid breaking it.

Step 19: Cook the Second Side
Cook for another 1–2 minutes until the second side is golden brown and the center is fully cooked.

Step 20: Remove and Serve
Transfer the cooked pancake to a serving plate. Repeat the same process with the remaining batter. Serve the pancakes warm with butter, sugar-free syrup, fresh berries, chopped nuts, or Greek yogurt. Enjoy a healthy, delicious, and satisfying low-carb breakfast.
