These Thermomix baked donuts are light, fluffy and delicious either dipped in cinnamon sugar or glazed with a sweet sticky frosting.

Ingredients
- 140 g pumpkin, peeled & cut into chunks
- 20 g Butter
- 100 g brown sugar
- 120 g Milk
- 1 egg
- 1 tsp vanilla extract
- 140 g plain flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2-1 tsp cinnamon
For sugar cinnamon donuts( Optional)
- 50 g butter
- 4 tablespoon caster sugar
- ½ teaspoon ground cinnamon
For glazed donuts(Optional)
- 240 g icing sugar
- 3 tablespoon milk
- 1 teaspoon vanilla extract
- Few drops food colouring
Instructions
- Place the pumpkin & sweet potato in the TM bowl & chop 5 sec / sp 8. Scrape down & repeat if necessary.
- Cook pumpkin 5 mins / 100 degrees / sp 1, stopping to scrape down once during cooking time.
- Add butter & blend 5 sec / sp 3 or until the butter is mostly melted.
- Add sugar, milk, egg & vanilla and blend 5 sec / sp 3.Add the remaining ingredients and combine 10 sec / sp 5.
- Scrape down & give a further 3 sec if required.
- Using a plastic spoon (or piping bag), portion the batter into a greased donut tray or mini muffin pan & bake at 180 degrees for 15-25 mins until they are lightly golden and a skewer comes out clean / they bounce back when lightly touched.
- Dust with icing sugar or cinnamon sugar to serve.
- Delicious hot from the oven or cold in lunchboxes the next day – if there are any left over from afternoon tea!!
For cinnamon sugar donuts
- For best results, top with cinnamon sugar while still warm.
- Mix together the sugar and cinnamon on a plate or shallow bowl.
- Melt butter (either in the microwave or in the Thermomix for 2 minutes / 60 degrees / speed 2).
- Use a brush to lightly brush each donut and then dip into the sugar mixture. Continue to press and roll until fully coated.
For glazed donuts
- For best results, allow to cool completely before adding frosting.
- Add icing sugar to Thermomix bowl. Whizz for 10 seconds / speed 9 to remove any lumps.
- Add milk, vanilla and food colouring (if using) and mix for 10 seconds / speed 3.
- Scrape down the sides and repeat. If the frosting seems too runny, add a spoonful of icing sugar; if it seems too thick, add a drop of milk.
- Either transfer to a shallow bowl and dip the donuts in, or use a spoon to pour the icing over the top of the donuts. Sprinkle over sprinkles before the frosting sets.
