0-Protein Pancakes Recipe
Note: It is not possible to make pancakes with truly 0 grams of protein, because almost all common pancake ingredients (flour, milk, eggs, oats, almond flour, etc.) contain at least a small amount of protein. However, the recipe below is very low in protein.
Ingredients
- 1 cup cornstarch
- 2 tablespoons sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- ¾ cup water
- 2 tablespoons vegetable oil
- Butter or oil for greasing the pan
Step-by-Step Instructions
Step 1: In a large mixing bowl, combine the cornstarch, sugar, baking powder, and salt.
Step 2: Mix the dry ingredients thoroughly so the baking powder is evenly distributed.
Step 3: Add the vanilla extract, water, and vegetable oil to the bowl.
Step 4: Whisk until you have a smooth batter with no lumps. If the batter is too thick, add a little more water.
Step 5: Let the batter rest for 5 minutes.
Step 6: Heat a non-stick frying pan over low to medium heat and lightly grease it with oil.
Step 7: Pour about ¼ cup of batter into the pan and gently spread it into a circle.
Step 8: Cook for about 2–3 minutes until the edges begin to set.
Step 9: Carefully flip the pancake and cook for another 1–2 minutes until lightly golden.
Step 10: Transfer to a plate and repeat with the remaining batter.
Serving Suggestions
Serve the pancakes warm with maple syrup, fruit jam, honey, or sugar-free syrup. You can also add sliced strawberries or blueberries for extra flavor.
Important: If you need 0-protein pancakes for a medical low-protein diet (such as kidney disease or PKU), it’s best to use a special low-protein baking mix made for those diets, since ordinary ingredients almost always contain some protein.
